Awesome Fruitcake Recipe

Here is the recipe for fruitcake. Its really good and people who don't care for it seem to like mine. If you have any questions,feel free to ask. Judy

1# butter
4 cups sugar
12 eggs
8 cups flour
4 tsp. baking powder
2 tsp mace
2 tsp nutmeg
4 tsp lemon extract
1 tsp salt
2 cups pineapple juice
1 box white raisins
2 cups red candied cherries
2 cups green candied cherries
2 cups tutti fruitti candied fruit
1 cup citron
1 cup candied orange peel
4 cups pecans
I mix the batter up in my 6 quart Kitchenaid then dump it over the fruit to stir by hand. Put it into greased floured loaf pans. Bake at 300 degrees until a toothpick comes out clean. I bake small to large pans at the same time so they are done at different times.

I make it on the day after Thanksgiving. When its done baking, wrap in muslin, sit it on a chunk of heavy duty tinfoil then give it a douse of booze and wrap it tight. Check it every so often, four or five days and if it is dry, give it another shot. Its ready Christmas day. They will get electrolysis some times and you will need to change the foil for new.

Tropical is made with dried papaya, pineapple, mangos and candied ginger and pecans. Same drill.

At the risk of seeming to be politically incorrect, I thought I would mention that people should be concerned about the ingredients that are used in making "tutti-fruiti candied fruit" and the ingredients that make up the other candied fruit. I appreciate transparency. We have a new HHS secretary that has succeeded in removing atrazine from some food products since it is linked to hormonal issues. Below is a sample list of TFCF ingredients from one supplier:

Ingredients
Cherries, Orange Peel, Lemon Peel, Pineapple, Citron, Corn Syrup, High Fructose Corn Syrup, Water, Citric Acid, Natural & Artificial Flavor, FD&C Red #40, FD&C Blue #1, FD&C Yellow#5. Preserved With: 1/10 of 1% Potassium Sorbate, Benzoate of Soda, Sorbic Acid, Sulfur Dioxide.

I doubt that the candied fruit in your fruitcake is homemade without all those chemicals, but if it is homemade that would have been nice to know before I purchased your fruitcake last year.

Education can help to preserve good health. I appreciate full disclosure. That is one reason why I don't eat at restaurants very often. THE MORE YOU KNOW...

I would highly suspect that a once in a year treat of small portions wouldn't be detrimental to someones health. You didn;t say what the results of ingesting the ingredients would be. Since you now know that, no I dont make candied fruit at home, that the purchase of my fruitcake is not on your agenda. Too bad.

They are misrepresenting fruit. There is nothing fruity about "Tutti-fruity candied fruit". It's a fruitcake!!!! Okay, maybe this is what has been used to make fruitcakes most of the time by restaurants for decades that are in business, but they don't always use healthy options with public health in mind. If they were fully transparent the fact is most people would avoid it so that tells me something.

You can substitute other real fruit options, and I'm sure it would still be a great recipe! What is wrong with avoiding the dyes and other chemicals? Do you really need the bright colors of the dyes? People tell their fruitcake jokes while these suppliers slip in unnecessary ingredients when you aren't looking... Maybe you should ask Artificial Intelligence (AI) about artificial ingredients in food.
