One thing you didn't ask but I will put in my two cents. Is the 'ownability' of the place. The shared energy of a store/shop is good. The Bakery had it. We all felt it was ours. It has to have warmth and invite people in. To sit and talk, eat, do crossword puzzles and maybe even a game of crib. That foundation friendlyness. (spell check hates that word) You just feel welcome. I did a Pie and Hi in the afternoons. From 2 to 4. A slab of pie and a bottomless cup of coffee. Encouraged people to come and visit with each other. (it was a neighborhood cafe) I was trying to foster a group during a slow time at the cafe. It worked. Did grandma pies. Butterscotch, banana cream, you get the drift.
