Its about electronic (instead of paper) price tags on grocery shelves that can be changed instantly according to demand. Whole foods started it. Prices can go up in the evening when people stop after work to pick up something for dinner.

Yes, as you say, prices can go up in the evening, but that's also the same as saying prices can also go down during the middle of the day.
I'm not arguing for or against it, I have no personal preference or any financial or emotional stake in this, but I don't see any reasonable way this is likely to be harmful. Your argument that prices will go up in the evening doesn't seem to me like it's actually a bad thing. It's just a change.
