We are contemplating a kitchen remodel and looking for advice/experience/recommendations for people in the valley who have done this (or alternatives that aren't $100k+)

IKEA Kitchen Cabinets + Custom Doors
Re: IKEA Kitchen Cabinets + Custom Doors
We did an Ikea kitchen 9 years ago. The lead time for everything was a bit longer than we had been told, but it was a new line at the time. All the parts did show up and worked together. Cost a bit over $4k at the time, which included a sink, butcher block counter tops, and a rolling island.
It's all white and still looks good and functions properly. Strangely, they wouldn't tell us the mounting requirements, so I just built the mounts as strong as I could. No issues.

I would certainly go with Ikea boxes and perhaps add custom fronts from Modern Twig or Plykea. There are several companies doing custom fronts. If you can find someone to help with the design and ordering that works best and will save you headaches in the long run. Don't scrimp on a good installer.
Re: IKEA Kitchen Cabinets + Custom Doors
I used to use Ikea, but have found that in recent years the quality has declined. The boxes are particle board, and you have to pay extra for the soft close hinges and drawer hardware. I don't think they even have solid wood fronts any more.
About 5 years ago we built a new kitchen and discovered that there are lots of Ready-To-Assemble cabinets available online. We tried one called The RTA Store (https://www.thertastore.com). I could not have been happier! The cabinet boxes are 1/2" plywood, the drawer fronts are solid wood, the hardware is quality (soft close) and the assembly was not difficult. Detailed instructions are available, and their customer support was very good. They are shipped flat pack and the delivery was on time with no problems. Our kitchen, bathroom vanity and laundry cabinets came to around $5K (this was in 2019).
I would also recommend the Huntwood cabinets that can be ordered through Methow Valley Lumber. They come fully assembled and can be customized to the 1/4". Having seen them at the homes of several people I know, we are in the process of ordering some and will find out more when they arrive. The staff at MVL are terrific and will walk you through the entire process. The cost is higher than the RTA cabinets, but I believe it will be worth it.
